Deep Cleaning Detailed Instructions

We will be checking to see if these are completed, but if you'd like the credit (who doesn't want recognition for their work??) , text Megan photos of your work! Before and After photos are great. Bonus points if you pose with your work.

**Stainless Steel can always get back to shiny!** 

It'll need steel wool, degreaser, towels wet with warm water, elbow grease, and a little patience. Small areas might need a tiny tool like a toothpick.

Do not use steel wool on gaskets as it can cause tears in the rubber. Instead use towels.

June 8

June 9

The refrigerated reachins hold the pizza backups, salad dressings, etc. Clean out the gaskets (rubber lining where the doors meet the unit), clean inside and outside of the doors, inside the handles, both sides (exterior), remove items from inside the base and clean out the bottom, remove the shelves and thoroughly clean each one, wipe off the vents at the bottom on the outside.

June 10

These are refrigeration units that sit below the Salad and Sandwich units. In total there are 6 doors. Clean the gaskets on every door. Clean the inside and outside of the doors and handles. Remove the shelves to clean each of them thoroughly. Clean out the inside base.

June 11

These are the two rows of shelves above the salad, sandwich, and soup areas. Remove all items and thoroughly clean each shelf. Make sure there is no food being prepped or uncovered near or below the areas you are cleaning off. Also clean the freezers, they are back to back at the end of the kitchen line. Clean the gaskets, inside and outside of doors, both sides, vents at the front bottom, and inside handles.  You do not need to remove and clean the shelves. 

June 12

Start from the top and work your way down: every part needs to be cleaned. The control area, the sides and back of that, then the shelf right below the kettle, the shelf we like to sit on, the legs. Also Clean every part of the rack that holds garlic rolls and breadsticks. Be very careful when working near the fryer! Do not spray or drop anything into the oil as it can be explosive!

Be careful if the top oven is still on/hot! The entire exterior of this oven, top and bottom, sides, handles. Leave no crumbs behind.

June 16

For this task we need to move the mats and pull all of the cooking equipment and tables away from the wall. Be very careful doing this as there are gas lines and power cords. While the units are moved, Sweep up any debris that was behind/under the units. Then use degreaser and steel wool, then warm water to clean the walls. Then mop the floors where you swept. Use care not to spray degreaser onto any open food.

June 17

Move any mats that will be in the way. Carefully pull apart the center cooking/prep line and tables to thoroughly clean the backs and sides of everything. Then sweep and mop the areas that were peviously underneath everything. Use degreaser to get up and black/built up areas that usually exists where table legs stood.

June 18

*Work Top to Bottom* The two metal shelving untis in the hallway by the walkin, and all the shelves below all of the prep tables on both sides of the restaurant. Take everything off of each shelf. Use Degreaser and warm wet towels to clean each shelf and the vertical poles that hold it together. Sweep the floor after you finsih an area.

June 19

MEN'S ROOM: We are scrubbing the tile walls in the restroom. They have build up specifically near the sinks and hand dryer, but we need to clean all of the walls. Wear Gloves. Close the bathroom while you are working on it. Don't use degreaser for this job, instead spray SoftScrub either directly onto the wall or onto a towel, and scrub it that way. You will need to rinse your towel frequently so you can bring a red bucket with you. Finish by going over all of the tile with a warm wet towel to remove any SoftScrub residue.

All of the tile walls in the dining room. Use degreaser and wet towels. All of the walls under the soda fountain and that surrounding area. Move tables and chairs away from the walls, spray and scrub the walls all the way down to the floor. Spray and scrub the tile walls under the front counters, and where people put their feet, all the way down to the floor.

June 24

Dining Room and bathroom hallway floors. Move the tables and chairs around as you spray degreaser into corners where the wall meets the floor, and the tile ledge under the front windows. Use scrub brush in the areas with black build up (tends to be in front of the soda cooler, under the table legs, and around the green mats where people walk the most), and wet towels on the window ledges. Then mop with CLEAN water.

June 25

Take each trash can outside, one at a time, and clean the insides and outsides with degreaser. Be sure to clean the lids from the dining room as well.

June 26

Slice Pie Rack: roll it away from the front and out the back door. Spray with degreaser and allow it to sit for a few minutes. Carefully clean the entire thing

June 27

Take every food container out of the salad unit and clean inside. Clean all of the edges, around the vertical poles that support the shelves, and under the lid.
